Heirloom Tomato Salad

urple Cherokee...Arkansas Traveler... Marvel Stripe... Mortgage Lifter...Brandywine... With their evocative names and gorgeous colors, heirloom tomatoes make a theatrical entrance, stealing the scene at any dinner table.

Ingredients:

  • 4 to 6 ripe tomatoes
  • salt and pepper
  • 3/4 cup chopped sweet onions
  • 1/2 cup chopped parsley
  • 1/4 cup red wine vinegar
  • 1/2 cup olive virgin oil

Preparation:

1. Wash and dry tomatoes. Cut into thick slices.

2. Arrange on serving dish and generously sprinkle with salt and pepper.

3. Sprinkle tomatoes with chopped onions and parsley then drizzle with vinegar and olive oil.
